Lunch

After my late night, I slept in today and skipped breakfast.  For lunch, I rummaged through the fridge and found this leftover Christmas turkey I had pulled out of the freezer and the ends of the LC Foods bread I had sliced up.  I heated the bread and meat on a griddle, added mayo and cheese, and made one sandwich and one bread-less sandwich with just the mayo and cheese.  It was all pretty good but the bread did add a whole lot of total carbs (it was thick slices so I counted it as 2.5 slices to be safe) even if they’re only 1 net carb per slice due to all the fiber.

  

 

Snack

After such a big lunch, I didn’t eat again until late and finished off this jar of peanut butter with a few Lily’s chocolate chips sprinkled on top.  Technically, I also had a Bai Coconut water later on and forgot to add it, so that’s another 2 net carbs.

Daily Reflection

My total carbs came in high, at 33g, and were a bit high on the percentage too.  However, once the fiber is subtracted, the net carbs come to 13 (with the Bai counted).  Luckily, my peanut butter is gone and I’m free from that temptation moving forward.

I had a lot of homework to get done so I didn’t get much walking in.  I’m going into the office tomorrow so I know it’ll be better.

Breakfast

I stayed up late Friday night so I had the final serving of the White Cheddar Sausage biscuits I made earlier this week.  Then, when I did get up, I had some bacon and a couple of slices of cheddar.

    

 

In the late afternoon, I had a serving of the Broccoli Rice casserole I made last weekend.

  

 

This evening I went out to a board game night and had a lot of fun but didn’t eat anything while there.  On the way home, I stopped at a Whataburger and got a double meat burger and diet soda.  This allowed me to use the two meat patties as buns but since the lettuce was in such small pieces, I just picked them up and ate one with each bite.

Daily Reflection

My total carbs came in at 26, which isn’t too bad, and most of that came from the white cheddar and sausage muffins.  Once I subtract the fiber, though, my net carbs came out to about 17, which is much better.

I put my FitBit on to charge early in the day and forgot to put it back on before I went out so my steps are a little low.  That said, I either stood or sat most of the time, not a lot of walking, so I don’t think I would have had much more than what was counted.

Breakfast

I took the time this morning to bring in a BulletProof Coffee (BPC).  Since I drove in, I drank it on the way so it was a good, filling start to the morning.

  

 

Lunch

For lunch, I brought what was left of the Big Mac Casserole I made yesterday.  I didn’t heat the Big Mac topping since it was already with the lettuce but it tasted just as good cold and stuck together in little clumps that made it easy to eat.  This recipe is already very low carb so eating just half of a serving made it even more so.

 

 

Snack Pt. 1

Since I had such a light lunch, I did eat the cheese I brought for my snack partway through the afternoon.

 

 

Dinner

I left work a bit late so on the way home I stopped at Boston Market; they’re having a 2 for $20 deal right now, so I ordered two meals, drinks, and desserts.  My lucky brother got both of the desserts and I did enjoy my meal.  I especially like their creamed spinach and turkey.  It was a bit high in carbs so I really should have just eaten half, but I enjoyed it nonetheless.

So I fell victim again to the peanut butter chocolate combo of deliciousness.  Luckily, the jar is almost empty so I’m hoping that’ll keep me safe for a while.

Daily Reflection

My carbs came out a bit high today, at 34 total carbs.  Most of the carbs came from my dinner from Boston Market, particularly the sides (although I don’t know how green beans could have so many carbs even if 4 are fiber).  Once I subtract for fiber and such, though, I end up with 23.5 net carbs.

On the plus side, being in the office helped me get more steps in.  Since I drove, I didn’t get my usual from walking to and from the train station, just from walking in the building itself.  After our fire drill on Wednesday, my calves were a bit sore when taking the stairs again but it was good to stretch them out.

I’m planning on going out tomorrow evening but am not sure what else I’ll do the rest of the day so I’ll try to get in some walking while I can.

Breakfast

I worked from home today so I fasted much of the morning and then started with a BulletProof Coffee (BPC)  Great, low carb start to the day.

  

 

Lunch

BPC is so filling that I was tidied over until I got off work, at which point I made a Big Mac Casserole.  I’d cooked the ground meat on an earlier day so I only had to mix it with the cheese and dressing and bake it a bit.  Put that over some lettuce and you have a tasty salad that doesn’t feel like a salad.  I only made a half batch and between my brother and I, we polished it off pretty good (with only a half serving left) so I think I’ll make this again and a full batch next time.

  

Dinner

With such a late lunch, my dinner was more of a snack, just some bacon and some sliced cheddar cheese.  Nothing fancy but tasty and 0 carbs.

  

Snack

I am miserably failing at breaking my peanut butter habit, especially once I realized how awesome it is with some chocolate.  It’s not terrible in the carb department and definitely helps with fats but I’ve found that I typically eat it just because I want it and not because I’m actually hungry so its additional carbs that I don’t actually need.

Daily Reflection

All in all today didn’t come out too badly.  My Fitness Pal recorded my total carbs at 26, which is close to my goal of 20 net carbs.  My fat percentage was a bit high and protein a bit low but at least the carbs were almost spot on.  Plus, most of those carbs came from the ChocoRite and the peanut butter so once I subtract the sugar alcohols and fiber, the net carbs are really only 12g, which is awesome.

As a bonus, I was good today and did go out and walk during my lunch break.  While it’s nowhere close to what I do the days I go into the office, it’s more than I usually get in so I’ll take it.

I’ll be in the office tomorrow and will take what’s left of the Big Mac Casserole for my lunch along with a snack and drink to get through the day.  I still need to figure out breakfast but otherwise I’m good for the day.

Breakfast

I rarely go to Starbucks but I’ve seen a few posts about them lately and decided to give it a shot, plus I had a gift card.  I ordered a “Sugar Free Cinnamon Dulce Light Frappucino with half water and half heavy cream” and am not positive if that’s what I actually got but it did have a sweet cinnamon flavor and tasted good.  I found the best match I could on My Fitness Pal and it came to 14 carbs although I don’t know how accurate that is to what I ordered or what I got.  I’d also heard of these new Sous Vide Egg Bites and they were on the board so I got the Bacon & Gruyere flavor; they come in a pair and were 9 carbs for both; not great but not too bad.  They had a nice flavor but I wasn’t huge on the texture.

  

 

Lunch

My morning was crazy, not long after the Starbucks trip our whole building (all 12 floors) had a fire drill, so that took most of the next hour.  We then had to play catch-up on our work and I had a lot of people either coming or calling me so I didn’t eat until almost 1:00.  I had taken a serving of the Broccoli Rice Casserole (nice and low carb) and had a Bai Coconut water with it real quick before my next meeting.

  

 

Snack Pt. 1

It was after 3 before I decided to have a snack.  I had the string cheese first and ate one serving (half the bag) of the snack mix mostly to try it.  It had a good flavor but was a bit spicy for my taste.  I did eat the full serving but it was toasty; I gave the other half to a coworker and she thought it was good too.  The cheese in these mixes really enhances it and gives it a savory flavor.

  

Dinner

I wasn’t too hungry when I got home and didn’t want anything in the fridge or freezer.  After a bit, I saw pizza on the TV and remembered I had those Good Pizzas in the freezer.  I’ve had the supreme but not the pepperoni so I got one out.  I’ve found that if I microwave to directions the middles stay frozen so I heat about a minute and then cut it into quarters so I can separate it and it’ll cook more evenly.  It was pretty good and I enjoyed it.

 

Snack Pt. 2

After a bit, the sweet tooth got me so I got a Chocorite Chocolate Peanut Butter bar and added more peanut butter to it; it was really good.  I then had a little more peanut butter to make a serving.  I think the peanut butter is becoming a problem and I probably need to hide it.

Daily Reflection

You really can tell the days I go into the office.  I did great on steps and floors and everything; I’m actually surprised it isn’t higher considering my walk to Starbucks and the fire drill, where we have to cross the street and go down a block.  My carbs came in really high, at 53g total carbs, mostly from the two Starbucks items so my carb % came out way too high and my fat was too low so I guess I should stick to my BulletProof coffee (BPC).  Once I remove all the fiber, my net carbs come to 43, which is again a lot higher than my goal of 20.

Luckily, I work from home the next two days and then have the weekend to get back on track.  I think I’ll up my BPC and egg uptake and do a partial egg fast, having eggs for at least one meal and maybe two.  I still have leftovers from other recipes and a couple more I want to make so those will likely be my dinners for the next few days.

Breakfast

I actually stayed up late watching a movie with my brother to get in some quality time so this was a late-night snack and I forgot to take a picture.  All I did was eat a chunk of cheese and some bacon, great snack.

 

Lunch

My brother had errands to run and brought me back a double cheeseburger from a local restaurant called Griff’s.  They’re not in My Fitness Pal so I used the closest match.  The nice thing about a double cheeseburger is that you can sandwich the toppings between the two meats and eat it as a sandwich that way, as illustrated in the second picture.  I didn’t eat the bun.

    

 

Snack Pts. 1 & 2

Mid- afternoon my brother was vaping and has a flavor called Strawberries and Cream that smells just like white chocolate with strawberry bits, so yummy.  That set off the sugar craving again so I had these Vanilla Cluster ChocoRite candies (1 net carb per candy but 2 in a package) and followed it not too long after with the peanut butter topped with Lily’s chocolate chips again.  I ate more if it this time and ended up being a bit full and miserable by the time I was done.

  

 

Dinner

After my Dr. appt. I stopped at Jason’s Deli and got my brother his favorite sandwich and myself a salad.  Upon returning home I looked it up and a small is over 20 carbs with a regular being over 50.  Darned if I can tell on what as avocados I know have more but can’t have that much and everything else was lettuce, tomatoes, or chicken.  I went ahead and only ate half but counted it as a small as I’m assuming I got the regular size.  It’s so frustrating when you make choices thinking you are being good but it’s the exact opposite.

  

 

 

Snack Pt. 3

Earlier in the day I had gotten a Cinnamon Cookie by Thin Slim foods from the freezer to thaw so I had that after dinner.  I barely tasted any cinnamon and it was very thick and had a strange consistency.  I was not a fan and wouldn’t but this again.

Daily Reflection

I wouldn’t have thought it possible but today was worse than yesterday and the sweet tooth continued unabated.  I didn’t get in near the exercise as I should have and my carbs came to 59 total again (and that’s with the chocorite and cookie scanning as net carbs so the total is really higher than that).  My macros aren’t as far off as they were yesterday so that’s a silver lining.  After subtracting the fiber, the net carbs still came to 52, which is dreadful.  The salad, made mostly of lettuce, only came in as 1 gram of fiber, which seems terribly underestimated to me.

My goal is to do better tomorrow.  I’ll be in the office so I know my exercise will be better and I won’t take any sweet snacks so I’ll at least be good while I’m there.  Hopefully the sweet tooth won’t pressure me into bad choices again.

Breakfast

Once I arrived at work today, I had an order of bacon and a large coffee to which I added a FatCoffee packet to make it a BulletProof Coffee.  Yummy breakfast.

  

 

Snack Pt. 1

I received these Fruit Sours in my most recent Keto Krate and finally tried them.  They dissolved in your mouth almost instantly but did have a good flavor and were refreshing.

   

 

Lunch

For lunch I had a serving of Crack Slaw that I had previously made and frozen.  Still tasted just as good as fresh and has held up to freezing very well.

 

 

Snack Pt. 2

In the mid-afternoon I was really craving some sweets so I had this stick cheese instead.  A little warm but still good.

 

 

Dinner

My brother has always loved this recipe of ground meat and egg noodles in a mushroom soup sauce.  I’d purchased some lower carb noodles (that really aren’t that low carb) and made it for him.  He said it was just the same as the original.  I thought it was good too but way too many carbs for me.

  

 

Snack Pt. 3 & 4

Apparently the cheese didn’t help my sweet craving so I caved this evening.  I had a Crispy Rice ChocoRite bar, which I think is one of my favorites.  A few hours later, I had the idea of sprinkling some Lily’s chocolate chips into the peanut butter and eating them that way.  I quite enjoyed it but managed to keep it to one serving of PB and half a serving of chocolate chips.

Daily Reflection

My steps and exercise were great today but that was about it.  My carbs came out super high and my macros are also quite out of whack, especially the carbs and protein.  My Fitness Pal (MFP) has my total carbs at 59, which isn’t too high above my preferred 50 but still more than I like.  On top of that, my net carbs came to 37; while a lot closer than 59, this is still a bit above my goal of 20 max.

My goal tomorrow is to cut the sweets back.  I would try to get more activity in, as it’s a day I work from home, but I have a doctor’s appointment right after work so I know I won’t get in as much as I’d like.

I have plenty of leftovers so that’s likely what I’ll be eating tomorrow for lunch but may get something for dinner since I’ll be out around that time.

Lunch

I was back to sleeping in a bit today so I got a late start and missed breakfast.  I wasn’t hungry right away and had thawed the items to make a Broccoli Rice Casserole so I started on that to have as my lunch.  Even though I printed a couple of recipes, I didn’t exactly follow either of them but slightly winged it.  I used one bag of riced cauliflower and one bag of Miracle Noodle rice, which I hadn’t used before.  I added broccoli and turkey (didn’t have the usual ham) and instead of using the traditional mushroom soup I added cream cheese and a small block of velveeta.  I then baked it with some shredded cheddar on top.  If I’d had mushrooms I would have chopped and added them as well.  Initially the main taste is that of the cream cheese but after that it’s pretty good.  I also got it stretched to 8 servings so each only came to 6.2 total carbs, 1.8 of which are fiber, leaving only 4.4 net carbs; really good for a full meal.

  

 

Dinner

After living in GA and TN, I developed an affinity for Zaxby’s but there aren’t many around here, even in the central areas of Dallas or Fort Worth.  Our nearest one is about 30 minutes southeast of Fort Worth and my brother happened to be going down there to help a friend with his computer.  I had to ask nice and give him some cash but he brought me back a Zaxby’s Blackened Blue Zalad (something I loved even before low carb and the first salad I ever actually enjoyed and ordered over a burger/sandwich).  I had to put the yummy toast far away quickly and used a different ranch sauce (they used to include an italian style dressing but it was ranch this time) but it was definitely tasty.  The carbs in My Fitness Pal came out to 15 with only 2 of those being fiber and that seems a bit high for it being mostly lettuce with just a bit of cabbage and tomatoes.  They might add things to their chicken which could increase the carbs.  This salad is also at least twice as big as what I would normally eat so I likely should’ve halved it but too late now.  I did also eat about 5 small White Cheddar Bites, my all time favorite thing from there, but they were cold and hard and I didn’t enjoy them which was great to learn.  That added another 7-ish carbs and they were well worth it.

My recent order of Thin Slim Foods items was a sampler pack and included several of their dessert items to try.  This Almond Bar was my first try and was a bit like a vanilla cake square.  The packaging shows very large that it’s only 2 net carbs so I was a bit surprised when I scanned it for 20 total carbs, 8 are fiber and 10 are sugar alcohols.  I wasn’t a huge fan of the texture or the flavor so it was a bit disappointing for that many carbs.  This was the plainest item I received so I’m hoping the others are better.

About an hour later I decided some peanut butter would help me get over the almond bar so I had one serving of it.  While 6 total carbs, it’s only 4 net carbs.

Daily Reflection

After a great start, my carbs came out a bit high today with 58 total carbs.  My macros were also off as I didn’t take in enough fat, leaving that percentage too low and the carb percentage over twice what it should be.  The almond square was my highest single item in total carbs but pretty much the lowest in net carbs.  After subtracting all the fiber, my net carbs come to 34, which is still higher than I would like.  Luckily today was a one-off with that high carb salad so tomorrow should be better.

I’m taking the crack slaw I took and didn’t eat Friday for my lunch and will likely have another serving of the Broccoli Rice casserole for my dinner.  Everything’s packed and ready to go so it should go well.

Brunch

I only fasted until noonish today.  I started cooking between 11 and 12 and my thick cut bacon took a while to cook.  I only did some of it in the pan and cooked the rest in the oven while I ate.  To go with the bacon, I had some Cream Cheese Pancakes; I had about 3oz of cream cheese so I went ahead and added a third egg and increased the other ingredients by a touch.  I wasn’t too worried about the sweetener or cinnamon since I knew I’d be adding the syrup and had a little bit of the cinnamon/butter/sweetener mix from Snickerdoodle Crepes that I also sprinkled on.  Since I increased the mixture, I only used half of it, making three pancakes, and saved the other half for a later day.  As a change, I did also crumble up one piece of bacon between two of the pancakes to see how it did.  Other than an occasional taste and saltiness, I didn’t really notice and much preferred just eating the bacon pieces separately.

  

Dinner

I spend most of the afternoon working in the yard, as you’ll see by the activity and steps on my FitBit screenshot today.  When I came, I thawed some turkey burgers.  Once my brother awoke, we buttered and toasted some of the bread I recently received (only 1 net carb per slice) to make burgers, with mayo, cheese, and pickles.  All in all it was good but as my first “sandwich” in a while, I really didn’t feel like the bread added anything; plus, because of it I wasn’t able to put as much mayo as I usually would so it seemed dry.

  

 

Snack

Since I had used so few carbs today (technically the bread had more but My Fitness Pal calculates it as the net carbs of 1 rather than the total carbs of 8 per slice) I indulged in a serving of Halo Top ice cream.  I’ve had 4 new flavors in my freezer for a while but also have about 4 open ones I’ve been working on finishing first but I decided to go for it and had the Chocolate Chip Cookie Dough.  It was pretty good, mostly vanilla with occasional cookie dough bits; it would definitely be better with more cookie dough.

Daily Reflection

I feel like today was a good, low carb day; plus I got a lot of needed chores done.  The weather was really nice and warm today (I had to change into shorts) so I was able to do some yard work like raking leaves and sweet gum seed balls and trimming.  I also sprayed some weed killer and then it rained about an hour later but at least I still got the activity in.

My brunch was enjoyable and filling, I wasn’t hungry at all through the afternoon.  Since I drank so much soda yesterday (no headache issues today, yay) I was feeling a bit dry so I started with a larger Powerade Zero to get hydrated and balanced.  I also had a good amount of water today.  Even dinner was good as a lesson, no unnecessary bread; I really didn’t need it and didn’t enjoy it all that much so I think I’ll leave the bread to my grilled cheese.

The weather is supposed to stay nice so I may do some more yard work tomorrow, depending on how sore I am from today.  The priority, though, will be my homework so I will likely focus on that.  I also plan to cook at least one meal, some broccoli rice casserole, and may make a second if I have time.

Breakfast

I went into the office today and, after arriving and drinking a bit of water, I heated up one of the White Cheddar Sausage muffins I had made the other day.  Still really good heated up and quite filling as well.

 

 

Lunch

Even though I’d brought some Crack Slaw for lunch, and had a second option of lasagna since the coworker I brought it for didn’t come in, my newest coworker mentioned not having yet been out of the office for lunch, so a group of us decided to go out.  We went to the Farmer’s Market which has around a dozen restaurants in it.  I had yet to try the Vietnamese restaurant so I went with that.  I got the Lemongrass Chicken (the options were sandwich or with rice or noodles but they just did it on a bed of veggies for me) and the flavor of the meat was excellent.  I didn’t eat many of the veggies since it was lettuce, cucumber, bell pepper, cilantro, and a carrot/onion (maybe) salad.  I mostly just picked out the lettuce to eat with the meat and did have one bite with some of the carrot salad (after tasting how sweet it was I didn’t have any more).  I also ordered Curried Cauliflower since I really like roasted cauliflower.  Unfortunately it was breaded and deep fried and not at all curry flavored so I picked off all the breading and ate them plain, still pretty good.  I had to find the best matches in My Fitness Pal so not sure of the accuracy but don’t feel like it came to 17 carbs.

  

 

Snack Part 1

I keep a jar of retro candies on the edge of my desk for coworkers and such and took in a refill bag today.  I never really dug into the original jar (that came with candy in it) so this time I picked out some that I’d heard of but never tried.  I intended to bring them home to try but a headache I’d been fighting all morning, thus the soda at lunch and then another with this snack, and decided to go for it.  I did eat only half of each at the most and did document them all, which unfortunately did come to 22 carbs of pure sugar.  I did make a knowing choice and was able to keep myself to what I said and brought the rest home to my brother and I did enjoy finding out what each of the candies were like.

  

 

Dinner

Another soda should help indicate continuing headache issues.  I broke down and took half of a migraine pill, which I don’t like to do because they make me nauseous.  I had ordered two boxes of the Good Pizza I’ve seen advertised on Facebook, one of Supreme and one Pepperoni.  I finally tried the first and though it was pretty good.  It’s not exactly the same as pizza but as an option I can actually just microwave and eat, definitely passable.

   

 

Snack Part 2

Even though the pizza helped, my stomach was still a but upset by the migraine pill, my head’s definitely feeling better though.  I basically just decided I wanted some peanut butter and just couldn’t be bothered to tell myself no.  Out of all the options, it definitely wasn’t the worst and I kept myself to two servings (four-ish spoonfuls).

Daily Reflection

My macros are off today, with carbs being a bit high.  Not a surprise given all the real candy I ate.  My total carbs came out to 64g, which is the highest I’ve had in a while.  The net carbs are 55 for the day, which really isn’t all that bad considering what I actually ate.  While it’s more than my ideal of 20, it’s close to my preferred max of 50.  Also, I know it was a one-off for trying the retro candies so I’m not as concerned about being derailed as I have been in the past.

While the peanut butter came in as my highest carb individual item (and I did eat two servings) the candy altogether was definitely the largest culprit.  The sodas also weren’t the best options since it reduced my water intake; hopefully this migraine pill will knock the headache out for good and I can get back on routine tomorrow.
