Feb. 27, 2017 Food Journal

 

Breakfast

I took the time to make a BulletProof Coffee this morning, adding Torani Caramel this time, and it was delicious.  I didn’t, however, take the time to take a picture so recycling this old one.

  

 

Snack Pt. 1

I went down to the building snack bar with a coworker and decided to try this string cheese mid-morning.  I actually liked it, it had an interesting flavor and more natural texture than the Sargento I usually eat.  Less than 1 carb for the stick.

  

 

Lunch

I brought two cut up eggs, with some mayo and mustard dolloped on top, for lunch.  Nice egg salad.

  

 

The egg salad left a bit of a taste so I did one one serving, two pieces, of this Xyloburst for just under a carb.  About an hour and a half before quitting time, I finally had the two cheeses I had brought with me, nice and soft.

 

Dinner

After being home for a bit, I settled on a serving of cream cheese pancakes to round out my day.  Technically, it put me over on my cheese to egg ratio but I couldn’t bring myself to eat just one or two regular eggs.

Daily Reflection

For those who hadn’t caught on, I started an egg fast today.  I wasn’t sure I’d fully commit but took it one meal at a time and made it through.  My total and net carbs, of course, are super low, at only 6g for the day.  My fat was slightly high and protein low so I’ll work on that tomorrow.

Also, going into work helped my steps, even though I drove and didn’t get my usual walk to and from the train station.  I was also pretty busy and didn’t get much time to just be up and about.

 

As as side note, I’ve discovered Jamberry Nail Wraps, and the style I’m wearing is Blooming Splendor, which is discontinued but still awesome.

Feb. 26, 2017 Food Journal

 

Lunch

I fasted until the afternoon and had a late lunch at a local Mexican food restaurant.  It was my first time going there for lunch and was surprised that they offered a taco salad, which isn’t on their dinner menu.  It was fairly simple, meat, lettuce, tomato, and cheese with a dollop of sour cream on top and I swiped my brother’s guacamole.  The closest match on My Fitness Pal (MFP) clocked in at 12 carbs, although I don’t know where they would’ve come from, so I left it at that but didn’t add the guac separately.  I’ve also included a picture of the empty taco shell.

  

 

 

Snack

I’m definitely not buying the Lily’s Milk Chocolate in full sized bars again.  It’s just so much like regular milk chocolate, so rich and creamy, that I can’t stop myself at just one row or even half a bar.  Today I ate half and it wasn’t even an hour before I ate the other half, with peanut butter.  I don’t remember setting it to log as net carbs but it’s a good thing it did or it would be showing over 40 carbs just for that.

  

 

Dinner

I took a nap after the chocolate so I had a late dinner.  I enjoyed the chicken and cheese so much the other day that I went ahead and had that again, although my cat ate about a third of the chicken (including a little bone).

Daily Reflection

Again, the chocolate scanning as net carbs is the only reason my carbs aren’t much higher today, definitely over my 50g goal for total carbs.  According to MFP, my total carbs were 22 and fiber 19, leaving me with only 3 net carbs but I expect the fiber from the chocolate is included in that and shouldn’t be subtracted as the chocolate is already in net carbs with the fiber subtracted.

Even better, my activity was quite good today.  Just this last week I discovered there’s a gym about 5 minutes from my house so I decided to check it out and signed up for their $10/month, no contract offer.  I then tried the elliptical and recumbent bike and some ab machines (the ones I could figure out).  My joining came with an offer for others to try so if you’re interested, it’s just below.  When I got home, I then mowed my back yard, which also significantly added to my steps.

I’ve already prepped for tomorrow, I boiled several eggs and mixed two as an egg salad to take along with some cheese.  I’ll have to figure something out for breakfast.

 

Feb. 25, 2017 Food Journal

 

Breakfast

I’m quite pleased to have discovered the Egg McMuffin, sans muffin, option as it’s made on-the-go breakfasts much easier.  Here, I ordered two and placed them together with the eggs as the buns; it was a but thick but tasty.

  

 

Lunch

I had a late lunch, after having been to the zoo and grocery shopping.  A third of a rotisserie chicken and some cheese sticks were the perfect light meal.

  

 

Dinner

I went to a game night at a burger joint and had a burger salad.  This is a chopped up patty with mushrooms on a bed of lettuce and tomato.  There’s also some shredded cheese and I added some bleu cheese dressing, excellent.

  

 

Snack

Unfortunately, the burger place also had a nice ice cream selection and someone at my table got a sundae and kept trying to pawn it off on the rest of us.  I was able to resist but did have to have some Halo Top when I got home.  The texture was a little off but flavor was great and it was so worth it.

A bit after that I did also have the second half of the Coconut Lily’s bar and some peanut butter.  The coconut bar was a lot firmer this time and didn’t melt in my hands like before so maybe it was just warm the first time.

Daily Reflection

My total carbs were spot on at 50, which is my goal, although slightly high in the percent of caloric intake.  The largest part of that was the chocolate, which is really only 4 net carbs but calculates in as 20 total.  My fiber was 22g, which brings my net carbs down to 28 and the chocolate has 5g of erythritol, bringing it down to 23g, which is quite close to my goal of 20g.

I actually met my 10,000 step goal today, which is awesome.  With my trip to the zoo followed by shopping, I did quite a bit of walking but was impressed it came to that much.  Hopefully I can keep the momentum going this week.

Feb. 24, 2017 Food Journal

 

Breakfast

I started my day with another BulletProof Coffee.  This time, instead of the Torani Vanilla I sweetened it with some Chocolate SweetLeaf drops.  I still didn’t notice much of a chocolate flavor but it still tasted good.  I forgot to take a pic so this one’s from yesterday.

  

 

Lunch

The coffee was fairly filling so I had a late lunch.  I had pulled out this Pesto Chicken Spaghetti Squash bake on Wed. to eat at work and ended up not eating it so I had it today.  It reheats well and has good flavor, quite enjoyable.

  

 

Snack Pt. 1

I’m suffering from shark week, big time, so when the afternoon hit I couldn’t fight the craving anymore.  I ordered this peanut butter online and it arrived last weekend but I’ve been trying to keep the carbs lower and hadn’t tried it.  It was pretty good but had separated a bit and was runny, so I need to mix it back together before trying more.  I wasn’t a fan of the chocolate, I thought coconut would be little flakes but I think it’s made with coconut oil, which makes it melt super fast and gives it a weird texture.

  

 

Dinner

Once I got off work (from home) I went outside and did some yard work.  First raking the back yard to get as many sweet gum balls as possible, then mowing the front yard.  By the time I came back inside, I was pooped and was not making dinner.  I ordered through UberEats from a local restaurant and got Parmesan Crusted Sole with Spinach Orzo.  It was hard to tell if the fish was only crusted in parmesan or if there was breading on there too and I had forgotten orzo is a type of rice so I basically picked out the spinach leaves to eat with the fish.  It had a great flavor but I feel like it was really more carbs than the matches I found on My Fitness Pal came to.

  

 

 

After dinner resulted in more chocolate, of course.  These wafer candies are quite good and I’ll have to keep myself from eating them all.  Even my brother thought they were decent.

I stayed up late completing my very last assignment for my Master’s degree and had the two sticks of string cheese to keep me going.  I originally intended to get something 0 carb, to not add to what I already had, but these were more interactive (what I needed) and worth the 1 carb each.

Daily Reflection

Not my best day but by no means my worst.  Today was actually pretty decent except for the fact I’m trying to be stricter with my end-of-month weigh-in coming up and a goal to hit.  My total carbs in My Fitness Pal came to 61g, a bit over my goal of 50g.  A good chunk of that, 20g, comes from the total carbs of the Lily’s chocolate being calculated, 12g of which are fiber and another 5 erythritol.  The next highest was the fish and I still fear it should be even higher than the 16g of carb option I selected in MFP (one option was over 100g in carbs).  Altogether my fiber intake was 20g, plus the 5g sugar alcohols, brings my net carbs down to around 36g, definitely over my 20g goal.

On the other side, all my outdoor yard work really helped my steps and exercise goals, with over 5,000 steps for the day.  For a work at home day, that’s excellent.  🙂

Feb. 23, 2017 Food Journal

 

 

 

Breakfast

I started my day with a BulletProof Coffee, yum.  I tried adding cacao nibs and didn’t find that it helped any as the blender didn’t really catch and cut them up.  It was still good anyway.

 

Snack

I had a charity event this evening so even though I wasn’t quite hungry, I didn’t know when I’d get a chance to eat so I had a couple of cheese pieces to tide me over.  These are sold at Sam’s and are quite good, a nice change from the standard cheddar and colby jack.

  

 

Lunch

Technically I ate this at definitely dinner time but as I had another meal after, I moved it to lunch.  I thought I was good in not getting buns or even cheese (the bag behind the counter said Velveeta brand shredded cheese).  I don’t know what kind of hot dogs they used but, based on how puffy they were, I’m guessing BallPark, which come out to 5 carbs per dog, *sigh*.  Even worse, I had two of them.

   

 

Dinner

I grabbed this on my way home from the charity event, well after 10pm.  A Whataburger double meat with no bun.  I added the mustard and mayo myself so it didn’t quite have the Whataburger flavor but close enough.  If you don’t live in TX, you’re missing out.  I was surprised at how high the carbs still were, but there were tomatoes and lettuce.

  

 

Snack Pt. 2

I decided to end my night with something sweet.  I was choosing between ChocoRite peanut butter or crispy when I glanced up and saw a large box.  It hit me suddenly that I had ordered these La Nouba desserts and hadn’t even taken the plastic wrap off the box.  They make great low carb marshmallows BTW.  I broke that sucker open and barely took the picture before scarfing it down.  It was actually really sweet and nice and crispy; I’m definitely glad I have a whole box of them.  The only down side is they are maltitol sweetened and foreign, so the label is hard to read.

Daily Reflection

Unfortunately my carbs aren’t as low as yesterday, darn hot dogs, and my total carbs came in at 23; the dessert pushed me over the edge.  My Fitness Pal recorded 0g fiber, although there had to be some in those veggies with the burger, that keeps me at 23 net carbs for the day.  Technically my total carbs were higher as the dessert clocked in as net carbs.

My steps were decent, I worked from home and spent much of the day sitting at my computer.  Even at the event tonight, I was mostly sitting with just a little walking, as evidenced by all the red dots on my activity.  I work from home tomorrow too but do have yard work to do so that should help.

Feb. 22, 2017 Food Journal

 

Breakfast

I’ve had this breakfast in mind for a bit and finally got it.  I’ve always loved McDonald’s Egg McMuffins.  Although I do like English Muffins, no longer allowed, I always particularly liked the egg and how it’s cooked on the McMuffin.  So I ordered two, with no muffins, and a plain coffee.  I added FatCoffee to make it a BulletProof Coffee and some sweetener.  My cheese had mostly melted off by the time I got to work and had time to eat it so I didn’t eat it as a sandwich (with the eggs as bread) as I had intended but it was still yummy with a fork.  I absolutely plan on making these for breakfast at home once I get a ring to cook the eggs.

  

 

Lunch

Even though I brought a spaghetti squash meal for lunch, my newly obsessed coworkers wanted to go to Jason’s Deli (my 4th visit in less than 2 weeks, third with them).  We got it to go and brought it back to the office; this time I ordered the Chicken Cesar Salad and it was pretty good.  I also started on this bottle of Core water, which was also pretty good.

    

 

Dinner

I went with a light dinner of Deviled Eggs.  Just mayo, mustard, and a little Grey Poupon.  My brother really likes deviled eggs so I only ate four of the eight I made (two whole eggs).

Daily Reflection

I did quite well today, with only 15g total carbs, 2 of which were fiber, leaving me with only 13g net carbs.  I’m not sure what on my salad was still 9 carbs as it was just lettuce, cheese, and chicken (which may have been treated).  I’m working to have at least one of my meals be egg fast type meals in order to meet my weight goal so hopefully it’s helping.

Going into work today and walking somewhere for lunch helped with my steps.  Also, I spent my evening prepping for a charity auction, which kept me moving around and also added to my steps.

Feb. 21, 2017 Food Journal

 

Breakfast

BulletProof Coffee (BPC) is the way to start your day.  It’s warm, has caffeine, and is very filling, enough to be a meal replacement.  My brother, not a coffee drinker, tried it and thought it was dreadful, lol.  For non-coffee drinkers, BulletProof Tea is also a good option, as is cocoa.

  

 

 

Lunch

I’m working harder to keep my carbs down so I made Cream Cheese Pancakes for lunch.  They are so easy to make and, with a little butter and syrup, delicious and filling.  The only net carbs come from the cream cheese as the syrup is sweetened with sugar alcohols.  For some reason my pancake recipe in My Fitness Pal was doubling everything so I corrected it and the total carbs for this meal was only 12g, not 24g.

 

 

Snack

As it was getting close to dinnertime, I wasn’t hungry and by bedtime I could have eaten or skipped.  Then I made the mistake of watching a show about state fair food and definitely got hungry.  I settled on a cheat version of Cheesecake fluff, where I add Swerve Confectioner’s and vanilla to some cream cheese and just mash it around with a fork, rather than blending it.  It’s not as light and fluffy but tastes as good.

Daily Reflection

My carbs were quite good today, with total carbs coming in at 19g.  With the 8g of sugar alcohols in the syrup and 1g fiber, that brings me down to 10g net carbs.  This was exactly my goal, to do a semi egg fast and keep carbs and calories down for the next few days and help my progress.

My FitBit has less that 1,000 steps but I’m still not wearing it due to the redness on my wrist.  I’m wearing it loosely at night but not during the day; I tried my other wrist and it just didn’t work.  Today, though, I did quite a bit of yard work so I know my steps are much higher, maybe around 3,000, 5 at the max.

Feb. 20, 2017 Food Journal

 

Breakfast

I did sleep in a bit today but treated myself to a BulletProof Coffee (BPC) as my first meal.  I got in an order of new supplements, including some collagen powder so I added that for the first time.  I did notice a slight difference in taste but not to the texture and it wasn’t bad or disruptive to the drink.  I’m going to try making these more of a daily option rather than just a couple of times per week.

  

 

Lunch

I went out to play bingo tonight so technically this was dinner but my second “meal” of the day.  This pub was nice enough to sub grilled chicken tenders and roasted veggies.  I didn’t think of the honey mustard, which has a lot of carbs, but I tried to go light on it and it was a nice treat.  I did eat the coleslaw too but it wasn’t very sweet so I’m hoping it wasn’t too bad.

  

Both before and during my meal I had a vodka and diet coke.  I rarely drink so definitely felt it and luckily kept it at 0 carbs.  I did follow it with two much bigger glasses of water.

 

Dinner

Technically this falls more into a late night snack as I picked this up on my way home from the pub.  I got just a single burger for myself, lettuce wrapped, plus a bacon cheese dog, no bun.  I love Five Guys.  🙂

Daily Reflection

Even though my meal times were a bit off today, I did fairly well, especially since two of them were eating out.  My total carbs came to 21g, which is super close to my net carb goal already, and I had at least 2g fiber, which brings my net carbs to 19g, within my 20g goal.  Also, my carb percentage of total calories is almost spot on, even if my fat is a bit high and protein a bit low.

My walking is still low but I have still been leaving off the FitBit, only wearing it for a couple of hours and even then very loosely, due to the redness/rash on my wrist where it goes.  I still didn’t walk a lot but it’s even lower than usual due to this.

Feb. 19, 2017 Food Journal

 

Breakfast

Today started with some simple bacon and cheese with a Bai coconut water.  Even though the total carbs came to 10, the 9 from the Bai are mostly sugar alcohols so my net carbs for this meal were really only 3 (one from the cheese).

  

 

Lunch

Bacon was followed by more cheese, with a littler pepperoni added in.  This is mostly cheddar with a little colby jack and 1/8c of pizza sauce for dipping.  Altogether only 2 carbs.

Snack

I indulged in some peanut butter and chocolate as a snack today.  28 total carbs is a lot but the peanut butter has 3g fiber, leaving 3, and the Lily’s has 11g of fiber and 6 sugar alcohols, leaving only 8 for this snack.  It’s still my highest carb meal of the day and on the plus side the peanut butter really helped mask the saltiness of the chocolate.

    

 

Dinner

After finishing all of my classwork for the day early, I made a JitB run and got a couple of Sourdough Jacks, which I ate without the bread.  They’ve always been my favorite and were almost as good without that sourdough (although not quite).  It was hard to find a good listing for them in My Fitness Pal so I matched it up as best I could but that came out to 12 carbs, 4 for the ketchup and 6 for the tomatoes, although almost 2g of that is fiber, leaving 10 net carbs for the meal.

Daily Reflection

My total carbs weren’t bad today at 52, very close to my goal of 50.  My net carbs came out closer to 23, which again is over but close to my goal of 20.  Not my best day but definitely could be worse.

Speaking of worse, my steps were especially low but with cause.  I put my FitBit on to charge after I woke, I would rather record sleeping than walking, especially on days when I know I won’t be walking much (with all the homework I had).  I did remember it but also noticed some redness on my wrist, which didn’t go away.  I decided to leave the tracker off and give my wrist a break to determine if it’s a rash or not.  Even this evening it’s still there, not a good sign.

I’m off work tomorrow for the holiday so will be working to finish up my last big class assignment.  I’m also going to Bingo tomorrow evening and will likely eat out, hopefully with something low carb.

Feb. 18, 2017 Food Journal

 

Breakfast

I slept in a bit after staying up late doing homework and then fasted for a while, I’m not typically very hungry when I first wake up.  When I did eat, I went big, lol.  I decided to make some Cream Cheese Pancakes and, as a twist, added cacao powder instead of the cinnamon.  It didn’t seem to hurt or help the taste any but definitely made them darker, lol.  I also heated up some bacon I had cooked Thursday and made a BulletProof Coffee (BPC).  Yum.

 

 

Dinner

With such a filling Brunch, I didn’t eat dinner until almost 8:00.  I had pulled some pork tenderloins out of the freezer and cooked them while I reheated the roasted cauliflower I’d had earlier this week.  I added a slice of cheese to the cauliflower and also put some sugar free bbq sauce on the pork and threw in a side of ranch to add flavor if needed.  It came out really good and the bbq and ranch went well together.

  

 

Snack

I’m staying up late working on homework again, big projects for both classes due this coming week, so I caved and had some Lily’s chocolate and peanut butter.  Luckily, this peanut butter isn’t as addictive as that other stuff, and is lower in net carbs, so I was able to just dip in the rows of chocolate and eat it that way.  I also included a little eye candy, lol.

Daily Reflection

My total carbs came in fairly decent today, at 34g, which is under my goal of 50g.  Of that, 8g is fiber and I know the syrup I used on my pancakes is 0 net carbs, giving me 8g sugar alcohols at least.  This brings my net carbs to 18g, which is within my goal of 20g, yay me.

This is also good since I didn’t get in hardly any walking due to being chained to my computer for this homework.  I’m hoping to get some yard work in tomorrow, depending on when the bad weather comes in, so that will help if so.
