If you follow my posts, you may have noticed I’ve been MIA for a few days (almost a week). My cheat meal last Friday turned into a cheat weekend that also went through half the week; this is why I don’t cheat. According to my coworkers, I didn’t just fall off the wagon but set it on fire and pushed it off a cliff. Happily, I have clawed my way back onto the charred, broken remains but not before the resulting increase in weight shown below. Here’s to moving forward.
BulletProof Coffee, the old staple, was my friend this morning, keeping me satiated well into lunchtime.
Since I ate late, I heated up this leftover soup of chicken broth, chicken, cauliflower, and riced cauliflower. It’s about twice what I would normally have as a serving but coming off carbs, I thought the extra broth, which it mostly was, would be beneficial.
Snack Pt. 1
Once I got off work I had a pickle, which is supposed to be beneficial in getting back to keto and recovering from carb eating.
For dinner I made a Fathead Pizza. This time I split the recipe into three servings and it still made a decent sized meal; I may go down to quarters next time. I topped half with pepperoni and the other half with cut up chicken and meatballs. I also used a new sauce that’s only 6 total carbs, 4 net, for a half cup, rather than 4 net for a quarter cup so I’m quite happy with that. Plus, my brother said the sauce masked the flavor of the dough, which he usually doesn’t like.
Snack Pt. 2
I’m trying not to make too drastic of a change in my carb intake so I went ahead and had some peanut butter and one ChocoRite bar to ease my way back to LCHF, especially after all the junk I ate this last week.
According to My Fitness Pal, my total carbs today came to 47g, which is within my goal of 50g. I know the ChocoRite scanned as net carbs though, so it was really slightly over. My highest contributor was the Bai Coconut water, which was really only 2g net carbs (I forgot to double the serving so it was really 18g total). With 12g of fiber and the 7g sugar alcohols from the Bai, my net carbs for the day are closer to 28g. This is over my goal of 20g but, as my first day back on LCHF, I’m pleased it’s as low as it is.
I did get out and walk the neighborhood during my lunch today, which helped with my steps and exercise a lot. I’ll be in the office tomorrow and will go to the gym this weekend to get back on track for next week.
Since I snacked on the party foods at work all day Wed. I still have my lunch and snacks I had taken ready to go for tomorrow.
