Egg Fast (kinda) – Day 3

 

Breakfast

I worked from home today so I fasted until mid-morning and then had a BulletProof coffee, with caramel syrup.

  

 

Lunch

The internet went back out around 1pm so I made my lunch.  I’m trying to quickly use meats and such from the fridge/freezer so I added some ham lunchmeat to my scrambled eggs and put shredded cheese on top.

  

 

Dinner

The internet finally came back on so I was able to finish my workday.  I had a late dinner of two hardboiled eggs (I boiled a dozen in the hopes it’ll help them last longer).  I also made rollups with a slice of lunchmeat and cheese with a little mayo between.  I also had some mayo and mustard to dip the eggs into.

Daily Reflection

I did much better in following the Egg Fast today, besides a little added meat.  My lunchmeat is 0 carb as well so my whole day only came to 2 carbs, perfect.

I’m also working to move more normally, rather than avoiding or economizing my walking, so my steps were decent today as well.

March 29, 2017 Food Journal

Egg Fast Day 2 (Kind of)

 

Breakfast

Last night a big front line came through and our power went out at about 2am.  It was still out when I left for work this morning (I was supposed to work from home but no power or internet) so I bought a coffee and water when I got to the office.  I added a FatCoffee packet and some sweetener to make it a BulletProof Coffee.

  

 

Lunch

When I left this morning, I quickly grabbed these hardboiled eggs and stick cheese from the fridge, so it was my lunch.  I also had some mayo packets at my desk, which I ate the eggs with, plus a little salt.  I actually didn’t eat the Cheddar-Jack cheese until later in the afternoon.

 

Dinner

After following it all day I heard at 4pm that our power was back on (after over 12 hours) so I stopped at a grocery store on my way home (although not too close since the ones by us had also had been without power and had to toss all their refrigerated and frozen items).  Since I was unsure of everything in the fridge, I also bought this turkey breast (similar to a rotisserie chicken) and pack of cheese for my dinner.  Not egg fast but ended up being a good thing since the power was out again when I got home.

 

 

Snack

Definitely not Egg Fast compliant but I also bought this Halo Top at my stop on the way home, plus some ice cream sandwiches for my brother.  He was eating his so I decided to at least try this in case the power didn’t come back on and I’d have to toss it.  I only ate one serving (about a quarter of the container) and it was delicious.

Daily Reflection

The power didn’t come on until 1:30am that night, almost 24hrs with no electric, and the internet still wasn’t completely working for the next 24hrs so I’m actually writing this two days later and have a lot of catching up to do (I could upload the pics with my phone and data but it’s too much rearranging and typing to do on the phone).

I’m mostly disappointed about not being able to stick to the Egg Fast but did work to stay as close to 0 carb as possible.  The bad thing is, with the power being out so long, some things in the fridge/freezer have to be eaten ASAP before they go off (besides what we already had to toss).  This particularly means meats and maybe eggs so I will have to add meats to the next few days of meals as well.

That said, if I subtract the sugar alcohols and fiber from the Halo Top, I did stay really low carb for the day.  My total carbs came to 22, with three fiber and I think 4 sugar alcohols, leaving 15 net carbs.  Not as low as a straight egg fast by any means but decent under the circumstances.

Going into the office and then the store helped my steps.  I’m still dealing with a twisted ankle and bruised knee (opposite legs) so walking is slow and semi-painful so I’m avoiding excess walking but still better than it has been.

March 28, 2017 Food Journal

Egg Fast – Day 1

 

Breakfast

I fasted until late morning and then had a BulletProof Coffee for breakfast.  Just blend instant coffee, butter, coconut oil, with some collagen and Torani vanilla sweetener for a delicious start to the day.

  

 

Lunch

I didn’t eat lunch until the afternoon, after I got off work and puttered in the yard.  I just fried three eggs in butter and grated some white cheddar on top.

 

 

Dinner

I already had some hardboiled eggs so I cut up two of them and mixed with some mayo and mustard to make some egg salad.  I also baked two slices of cheese, broken into quarters, in the oven to make cheese chips.

Daily Reflection

I’ve had a rough couple of weeks, with some health issues and a fall that injured one ankle and the other knee, putting both legs out of commission.  While I didn’t go crazy, I didn’t stick to low carb either due to the convenience while unable to stand to cook and not feeling well.  I went back on low carb yesterday and stuck to an egg fast today.  As you can see, my carbs were super low and my fat the highest, as it should be.

My tracker isn’t syncing with my phone tonight but I got 1,911 steps, which is probably the most I’ve gotten besides yesterday, when I went into the office.  I fell last Wed. and have spend most of my time horizontal since then, even using a rolling chair to get around the house.  Today I did walk the back yard a little bit so the steps were decent.

I plan on continuing the egg fast tomorrow and will work on switching up the recipes as I get tired of fried and hardboiled eggs really quick.  I’m still limited on standing comfortably so we’ll see what I can manage.

 

March 19, 2017 Food Journal

 

Lunch

I took this to work for my lunch most days this week and never actually ate it, so I had it today.  Nothing better than a nice soup with meat and veggies, completely homemade.

  

 

Snack Pt. 1

I’m still working my way through my new Keto Krate and settled on this Adapt Bar today.  I’ve had the Brownie flavored one before; I liked the flavor of this one more but still am not a fan.  It’s weirdly chewy but also melty, likely due to a high coconut oil content.  Even after, there were bits in my teeth, maybe coconut.

 

Snack Pt. 2

While awaiting dinner, I enjoyed more chocolate and peanut butter.  I went for a darker chocolate this time, and did stop for a bit after one serving.  The second half of the bar followed before too long though, so the struggle continues.

 

 

Dinner

Happily, my brother went down to our nearest Zaxby’s and brought me back a Zalad, yum.  Even though it’s a bit high in carbs, I used both of the Mediterranean dressings that come with it and did also eat one of the pieces of toast.

  

Snack Pt. 3

My brother bought some Mint Chocolate Chip Ice Cream Sandwiches and has been eating some every night.  Luckily, I had this in the freezer and had a delicious serving.

  

 

Snack Pt. 4

Another Keto Krate item, I actually ate these last night while I was staying up late.  I had just a few tonight as well.  I’ve never been a fan of pecans (sacrilege here in TX) but these are pretty good and the salt helps them a lot.

Daily Reflection

My cave to the toast contributed to my highest carb intake although I’m thinking now that count may be for the whole piece and I only ate a half.  The chocolate must have scanned as net carbs or it would be included in that ranking as well.  At 118g, my total carbs are way above my goal of 50g and even subtracting the 21g of fiber only brings it to 97 and the 22 or so sugar alcohols still have me at 75g net carbs, which is definitely high.

My activity wasn’t too bad, mostly due to my yard work.  I’ll be going into the office tomorrow so that will help a lot.

March 18, 2017 Food Journal

 

Breakfast

I fasted until after noon, planting some flowers and mowing the back yard, and decided to make some Cream Cheese Pancakes.  I have some low sugar strawberry preserves in the fridge and decided to try using them to make strawberry pancakes and it was a complete failure.  The preserves are a bit runny and made the pancakes too runny, so they wouldn’t stick together to be flipped when cooking.  I’ll stick to just adding the preserves on top with the syrup next time.

  

 

Snack Pt. 1

Not long after breakfast, I started eyeing some of the items I received in the new Keto Krate this month.  Having had some jelly, I decided to be brave and try the spicy peanut butter, which was definitely spicy.  Having tried it, I decided to see how it tasted with pork rinds, and it was pretty good, the sweet of the BBQ pork rinds complimenting the spicy and savory of the peanut butter.  My mouth burned for a while even after I was done.  I’m not a fan of spicy so likely won’t eat this peanut butter straight again but am considering using it as a sauce or marinade on some chicken.

  

 

Snack Pt. 2

As I’m still working back to ketosis, I enjoyed a pickle in the late afternoon, just before a nice nap.

  

 

Dinner

More experimenting for dinner tonight.  I had some hot dogs in the fridge and a remaining round of FatHead Dough from my batch earlier this week so I wrapped the dough around hot dog halves with a slice of cheese, plus some shredded cheese on top.  As you can see, the dough melted off a bit but they tasted good; my brother even ate a third one.

Dinner was shortly followed by another round of Lily’s chocolate dipped in peanut butter, my weakness.

I stayed up late enough to get hungry again and had a lovely snack of cheese and one meat stick.

Daily Reflection

I think I need to not work so hard to stay above my usual goal of 20 net carbs, as I’m definitely way over.  Most of that is from the chocolate and peanut butter, as I ate that whole bar and had peanut butter twice today.  The chocolate is mostly sugar alcohols and fiber, with only a few net carbs per serving.  Even subtracting just the fiber of 37g from my total carbs of 84g brings me to 47g net carbs, minus the sugar alcohols of 22g, leaving 25g of net carbs.

My activity was really good today, mostly due to mowing the back yard, along with some other yard work.  More planting tomorrow but no mowing.

Breakfast

I had the time to make a BulletProof Coffee to enjoy on the way in to work.

  

 

Lunch

A group of us went down to the Farmer’s  Market for lunch.  I ordered this lovely seafood meal of Blackened Redfish with Sauteed Spinach and Mixed Vegetables as my sides.  It was expensive but delicious.  My luck, the mixed veggies were predominantly carrots and tomatoes but it was good and different.

 

Snack Pt. 1 & 2

While leaving the Farmer’s Market I purchased this Texas Cheese Tray, with three different cheeses made here in TX.  I munched on this through the afternoon and did eat all the almonds and most of the Apricots that were included as flavor pairings.  It really did help accentuate the flavors of the cheeses and I felt very sophisticated.  Unfortunately, the one cheese was spreadable and very strong so I also ate some of the french bread they included with that cheese.  I did also try a bit of the jam they included; it didn’t go well with the cheese, which was more savory.

 

Later in the afternoon I had a serving of these sugar free York patties, a great palate cleanse after all that cheese.

 

 

Dinner

For dinner I made a Big Mac Casserole, which is delicious and I highly recommend.  It’s basically just cooked meat mixed with some cheeses and a low carb version of Big Mac Special Sauce, aka Russian Dressing.  Some dill relish and pickles atop a bed of lettuce finishes this off perfectly.

After dinner I had one of these wafers; I got out two but was good after the first one.

Daily Reflection

My carbs were particularly high today due to the french bread and jam I ate this afternoon.  It’s lucky I’m not working hard to stay at my 20 carb goal this week and the trick now is to not become derailed by eating some carbs.  All the sugar free candies I had scanned as net carbs, so my total carbs are really higher.  With on 9g of fiber, my net carbs aren’t much lower than that really high total so hopefully tomorrow will be better.

Having gone into the office and walked a bit to get to lunch, my steps for today were decent.

I bought some plants on the way home so tomorrow will be mostly yard work.  I don’t have any plans so will be able to stay home and focus on staying low carb.

March 16, 2017 Food Journal

If you follow my posts, you may have noticed I’ve been MIA for a few days (almost a week).  My cheat meal last Friday turned into a cheat weekend that also went through half the week; this is why I don’t cheat.  According to my coworkers, I didn’t just fall off the wagon but set it on fire and pushed it off a cliff.  Happily, I have clawed my way back onto the charred, broken remains but not before the resulting increase in weight shown below.  Here’s to moving forward.

Breakfast

BulletProof Coffee, the old staple, was my friend this morning, keeping me satiated well into lunchtime.

  

Lunch

Since I ate late, I heated up this leftover soup of chicken broth, chicken, cauliflower, and riced cauliflower.  It’s about twice what I would normally have as a serving but coming off carbs, I thought the extra broth, which it mostly was, would be beneficial.

   

 

Snack Pt. 1

Once I got off work I had a pickle, which is supposed to be beneficial in getting back to keto and recovering from carb eating.

 

 

Dinner

For dinner I made a Fathead Pizza.  This time I split the recipe into three servings and it still made a decent sized meal; I may go down to quarters next time.  I topped half with pepperoni and the other half with cut up chicken and meatballs.  I also used a new sauce that’s only 6 total carbs, 4 net, for a half cup, rather than 4 net for a quarter cup so I’m quite happy with that.  Plus, my brother said the sauce masked the flavor of the dough, which he usually doesn’t like.

 

 

Snack Pt. 2

I’m trying not to make too drastic of a change in my carb intake so I went ahead and had some peanut butter and one ChocoRite bar to ease my way back to LCHF, especially after all the junk I ate this last week.

Daily Reflection

According to My Fitness Pal, my total carbs today came to 47g, which is within my goal of 50g.  I know the ChocoRite scanned as net carbs though, so it was really slightly over.  My highest contributor was the Bai Coconut water, which was really only 2g net carbs (I forgot to double the serving so it was really 18g total).  With 12g of fiber and the 7g sugar alcohols from the Bai, my net carbs for the day are closer to 28g.  This is over my goal of 20g but, as my first day back on LCHF, I’m pleased it’s as low as it is.

I did get out and walk the neighborhood during my lunch today, which helped with my steps and exercise a lot.  I’ll be in the office tomorrow and will go to the gym this weekend to get back on track for next week.

Since I snacked on the party foods at work all day Wed. I still have my lunch and snacks I had taken ready to go for tomorrow.

Lunch

I fasted through the morning and, as I’m still dealing with health things and feeling pitiful my brother was nice enough to make me these grilled cheese sandwiches, yes, two of them.  These are two types of low carb bread, one with ham and American cheese plus a fried egg and the other with ham and Havarti.  They were both pretty good.

    

 

Snack

Later in the afternoon I gave in to a couple of these chocolate crisp bars, so good.

 

 

Dinner

I wasn’t up for cooking so I pulled an Atkins Chicken Margherita and a Mashed Cauliflower out of the freezer.  I added a bit of mozzarella to both.  The Atkins meal was actually really good; it had a great flavor and I quite enjoyed it.  I also had half the cauliflower with the Atkins meal, one serving.

Daily Reflection

My total carbs for the day calculated in at 53g, which isn’t too much over my goal of 50g.  I also had 35g of fiber, mostly from the bread, which leaves me with 18 net carbs.  I’m mostly proud that I only ate two chocolates for the day, with how miserable I was.

Following the miserable thread, I didn’t get much walking in.  My FitBit was on to charge half the day so I did get in more than what it shows but likely not by much.

I’m going into the office tomorrow so that should help increase my steps, miserable or not.  I’m mostly going in to have lunch with some folks I haven’t seen in a while so I’m only taking some snacks.

March 8, 2017 Food Journal

 

Breakfast

The bacon was so good for breakfast yesterday I had it again today.

  

 

Lunch

After only bacon and plenty of water in the morning, I was definitely ready for lunch.  Cauliflower Chicken Fried Rice leftovers and my coworker agreed it tasted good.

 

 

Snacks Pts. 1-3

My afternoon went fairly downhill, more from girl problems than stress.  Not long after lunch I had a Hazelnut Atkins bar and it was quickly followed by a Coconut Atkins bar.

There was a slight pause before I broke into the Sugar Free Reese’s, which had a weird flavor, so I didn’t eat all 5 (one serving) I had pulled out.  There was a longer pause, when I went downstairs to buy the accompanying soda, before eating the Yorks.

     

 

After all that junk, I did eventually feel hungry again not long before heading out so I had the cheese I had brought. I then found in my drawer the Pumpkin Seed and Kale snack I got with my last Keto Krate and ate the remainder of that, pleasantly surprised that they were still crunchy and tasty.

  

 

Dinner

Partly in an effort to redeem myself but mostly being too lazy to cook, I ordered a Cobb salad, with BBQ meat toppings.  It was very good.

As if I hadn’t had enough, I did finish off my jar of peanut butter with an accompaniment of Lily’s Milk Chocolate, the only one that didn’t scan in as net carbs and is my highest carb contributor for the day.

Daily Reflection

I thought yesterday was bad but today came in with 90g total carbs, way over my goal of 50g.  Once I take out the 58g of fiber and 14g sugar alcohol from the Lily’s I’m at 18g net carbs.  Even though that’s within my goal of 20g, it’s still not necessarily a win as I was way over on the total and my tummy is definitely protesting such a high intake of sugar alcohols.

Silver lining is that my steps were fairly good today, due to an afternoon walk and many trips to the bathroom (girl things more than sugar alcohol things, luckily for my coworkers).

I’m working from home tomorrow and, with the jar of peanut butter empty, am hoping to get control of the chocolate habit once again.

March 7, 2017 Food Journal

 

Breakfast

Simple and filling, I got out a new pack of bacon this morning.  I fit what I could into a pan in the oven and cooked the rest in a skillet.

  

 

Snack Pt. 1

By the afternoon, my bacon was wearing off so I had some peanut butter and this new chocolate I found.  The chocolate was completely sugar free and atrocious, the rest went in the trash.  I then had some more peanut butter with some Lily’s chocolate chips to recover.

 

Dinner

I had purchased this package of cauliflower rice mix ready-made for Fried “Rice” and finally got around to cooking it.  I just used the recipe on the back of the bag, with small substitutions of what I had on hand, and added some chicken and mushrooms.  Split into 6 servings, it came out to only 6 total carbs per serving, 4 net, which is really low for a full meal.  It was really good and even my brother agreed.  Will be making again.

  

 

Snack Pt. 2

I didn’t take a picture but I did indulge in more chocolate and peanut butter.  This time a couple of ChocoRite bars (so good) and a La Nouba wafer candy.  I was miserable after but just had to get that fix.

Daily Reflection

My total carbs aren’t as bad as I expected, at 51g, mostly because the ChocoRite chocolates scanned as net carbs instead of total.  Without them, the multiple servings of peanut butter became my highest carb contributor.  After subtracting the 23g of fiber, that gets me down to 28g of net carbs.  There was also some sugar alcohols in the Lily’s but I’ve thrown the bag and don’t know exactly how many so I’ll leave it at that.

My steps came out fairly decently for a work-from-home day.  I had signed up to do a group workout at the gym but the teacher was out sick so I just did some weight machines and the elliptical instead, accounting for most of those steps.

I go into the office tomorrow and have already packaged up more fried “rice” for my lunch, along with some snacks.
