Breakfast

I had the time to make a BulletProof Coffee to enjoy on the way in to work.

  

 

Lunch

A group of us went down to the Farmer’s  Market for lunch.  I ordered this lovely seafood meal of Blackened Redfish with Sauteed Spinach and Mixed Vegetables as my sides.  It was expensive but delicious.  My luck, the mixed veggies were predominantly carrots and tomatoes but it was good and different.

 

Snack Pt. 1 & 2

While leaving the Farmer’s Market I purchased this Texas Cheese Tray, with three different cheeses made here in TX.  I munched on this through the afternoon and did eat all the almonds and most of the Apricots that were included as flavor pairings.  It really did help accentuate the flavors of the cheeses and I felt very sophisticated.  Unfortunately, the one cheese was spreadable and very strong so I also ate some of the french bread they included with that cheese.  I did also try a bit of the jam they included; it didn’t go well with the cheese, which was more savory.

 

Later in the afternoon I had a serving of these sugar free York patties, a great palate cleanse after all that cheese.

 

 

Dinner

For dinner I made a Big Mac Casserole, which is delicious and I highly recommend.  It’s basically just cooked meat mixed with some cheeses and a low carb version of Big Mac Special Sauce, aka Russian Dressing.  Some dill relish and pickles atop a bed of lettuce finishes this off perfectly.

After dinner I had one of these wafers; I got out two but was good after the first one.

Daily Reflection

My carbs were particularly high today due to the french bread and jam I ate this afternoon.  It’s lucky I’m not working hard to stay at my 20 carb goal this week and the trick now is to not become derailed by eating some carbs.  All the sugar free candies I had scanned as net carbs, so my total carbs are really higher.  With on 9g of fiber, my net carbs aren’t much lower than that really high total so hopefully tomorrow will be better.

Having gone into the office and walked a bit to get to lunch, my steps for today were decent.

I bought some plants on the way home so tomorrow will be mostly yard work.  I don’t have any plans so will be able to stay home and focus on staying low carb.

March 16, 2017 Food Journal

If you follow my posts, you may have noticed I’ve been MIA for a few days (almost a week).  My cheat meal last Friday turned into a cheat weekend that also went through half the week; this is why I don’t cheat.  According to my coworkers, I didn’t just fall off the wagon but set it on fire and pushed it off a cliff.  Happily, I have clawed my way back onto the charred, broken remains but not before the resulting increase in weight shown below.  Here’s to moving forward.

Breakfast

BulletProof Coffee, the old staple, was my friend this morning, keeping me satiated well into lunchtime.

  

Lunch

Since I ate late, I heated up this leftover soup of chicken broth, chicken, cauliflower, and riced cauliflower.  It’s about twice what I would normally have as a serving but coming off carbs, I thought the extra broth, which it mostly was, would be beneficial.

   

 

Snack Pt. 1

Once I got off work I had a pickle, which is supposed to be beneficial in getting back to keto and recovering from carb eating.

 

 

Dinner

For dinner I made a Fathead Pizza.  This time I split the recipe into three servings and it still made a decent sized meal; I may go down to quarters next time.  I topped half with pepperoni and the other half with cut up chicken and meatballs.  I also used a new sauce that’s only 6 total carbs, 4 net, for a half cup, rather than 4 net for a quarter cup so I’m quite happy with that.  Plus, my brother said the sauce masked the flavor of the dough, which he usually doesn’t like.

 

 

Snack Pt. 2

I’m trying not to make too drastic of a change in my carb intake so I went ahead and had some peanut butter and one ChocoRite bar to ease my way back to LCHF, especially after all the junk I ate this last week.

Daily Reflection

According to My Fitness Pal, my total carbs today came to 47g, which is within my goal of 50g.  I know the ChocoRite scanned as net carbs though, so it was really slightly over.  My highest contributor was the Bai Coconut water, which was really only 2g net carbs (I forgot to double the serving so it was really 18g total).  With 12g of fiber and the 7g sugar alcohols from the Bai, my net carbs for the day are closer to 28g.  This is over my goal of 20g but, as my first day back on LCHF, I’m pleased it’s as low as it is.

I did get out and walk the neighborhood during my lunch today, which helped with my steps and exercise a lot.  I’ll be in the office tomorrow and will go to the gym this weekend to get back on track for next week.

Since I snacked on the party foods at work all day Wed. I still have my lunch and snacks I had taken ready to go for tomorrow.

March 5, 2017 Food Journal

 

Lunch

I had a late lunch.  A few days ago I bought a whole small chicken so I put it in my InstaPot today.  It was my first time doing a whole bird so I went for the whole hour and it came out perfect.  Most of the breast together with some cheese was the perfect lunch.  I also had a Bai Coconut water.

  

 

Dinner

Thankfully we don’t have a Zaxby’s near us but my brother was by our nearest, almost 30 min. away, and brought me back a Blackened Bleu Zalad.  These are delicious and are the first and only salad I would choose over a sandwich in my pre-low carb days.  I went ahead and added the Mediterranean Dressing that comes with it, even though it was 4 carbs, to get that classic delicious flavor.

Daily Reflection

My Fitness Pal has me with 37g total carbs for today, most of which came from the salad and dressing.  The Bai drink scanned as total carbs but is only two net, so that subtracts 16, with another 3 subtracted for the fiber.  This calculates my net carbs for the day at 18g, perfect.  My fat was pretty low; I’ll need to have some mayo or a dip with my chicken and cheese next time.

My steps were pretty decent for the day.  I went to the gym and did both weight work and cardio, which account for most of that.  It’s been on to charge since I got home from the gym.

I’ll be in the office tomorrow so I’ve already used the juice from cooking my chickens as a soup base, included some meat and added some veggies, to make a few meals.  I’ll be taking that with me tomorrow for lunch plus a couple of snacks for the rest of the day.

March 4, 2017 Food Journal

 

Breakfast

I stopped at a QuickTrip (QT) gas station to drop a package in an Amazon locker, so convenient, and went in to see if I could find anything I could actually eat.  I was looking at their P3 and similar snacks when I noticed their QT Kitchens board mentioned new Breakfast Bowls.  There’s several varieties so I decided to research before jumping into ordering something I’d regret.  I was only able to find the Protein one on MFP, at 10 carbs, but did eventually find out the Bacon one was “only” 5 carbs.  I asked and the girl confirmed they use bagged eggs and don’t have fresh, plus shredded cheese, probably account for most of those carbs.  It was actually pretty good, although probably at least half cheese, which made it a bit chewy and hard to eat as it cooled.  I’m just really pleased to find a somewhat low carb breakfast option that’s also warm without having to give a five-step order.  While I’d still prefer to make my own, it’ll be a new go-to when I’m on the go.

  

 

Lunch

I also passed a Buc-ee’s on my traveling, if you haven’t been to one and ever get the chance, definitely do it.  I was a bit sleepy so I got a coffee, no heavy cream option so I had to add Splenda and Half & Half but it was quite yummy.  They have a nice deli and had these cups with cheddar, pepperjack, and turkey bites.  I’m not sure how accurate the closest match in My Fitness Pal (MFP) actually was or how many carbs were actually in the meat; I looked at multiple items in the store and none had nutrition labels.  There were also pretzel sticks in the lid so I just skipped those.

  

 

Dinner

I had a game night tonight, lots of fun, and luckily was still full from my cup of meat and cheese.  This was my first time with this group and there was tons of food, just practically nothing I could eat.  All I did have was some cheese and strawberries.  I also had a Dr. Pepper left from my earlier stop to help keep me awake.  I’ve included pictures below of the table so you can see what I held out on, also not pictured was pizza, little sandwiches, and cookies.

  

 

 

Snack

Smelling all that delicious food for several hours almost made me cave, I just wanted to eat it all.  I normally don’t have cravings but also don’t usually have that much exposure for that long.  When I got home, I did make some “Cheesecake Fluff” but it was more like a cheesecake flavored pudding.  There are a lot of recipes out there but I’m lazy so all I did was microwave some cream cheese (I’d frozen it so it has a weird consistency now otherwise) and add some Swerve and vanilla.  Ta-da, cheesecake flavored yumminess.

Daily Reflection

Today was a bit odd as I went up to Texas Tulips, a tulip field about an hour north of where I live.  This caused most of my meals to be on the road and almost all to be away from home, which greatly limited my options.  I realized at the end I basically just ate meat and cheese all day.  Still, my total carbs in MFP came to 27g, which isn’t bad, with 2g of fiber, making my net carbs 25g.  This is over my goal of 20g but for a day on the road, I don’t think it’s too bad.

My steps were decent too, with walking around the tulip field and everything else it added up to almost 5,000.  If it hadn’t been so cold, windy, and miserable, I probably could’ve hit 10,000 steps wandering that field, it was so pretty.

I’m supposed to go out for BBQ for lunch tomorrow but this icky weather is supposed to continue so we’ll see if that happens or if I just stay curled up in the house all day.

March 3, 2017 Food Journal

 

Breakfast

Today was a bit off as I had a meeting at a non-work location and not until 9am, but I had to dress up for it.  I still got up at my normal time so I could take my time to look pretty, but left the house later than usual, fighting traffic the whole way.  As I was getting ready, I also fixed myself a BulletProof Coffee, which I drank as I was getting ready and on the road.  It worked like a charm; I wasn’t even super hungry come lunchtime.

 

 

 

Lunch

When my meeting was over, it was after 11 so I checked in and a coworker requested Chick-fil-A, which happened to be only a couple of minutes from where I was.  I ordered the Cobb Salad, no corn, and put Avocado Ranch Dressing.  I’m not sure if the chicken was spicy or it was a different dressing but it was a bit hot and I’m not sure if that added any carbs or not but I just counted it as I ordered.  I also had a Diet Coke but no fries (despite smelling them the whole drive into the office, I wasn’t even tempted).

  

 

Snack Pt. 1

The water I had brought with me got hot in the car during my morning meeting (already hitting decent temps here in TX) and the soda from Chick-fil-A didn’t last long (mostly ice) so I went down and got a diet soda and water from the snack bar in my building.  All that soda triggered a chocolate craving and I had just restocked during last weekend’s shopping trip.  I only had two of the Russel Stover Strawberry cream candies, they were so sweet.

  

 

Dinner

Here’s where things go downhill, lol.  For those of you following for LCHF ideas, please disregard the remaining food items in this post.

I’ve been craving real pizza for a while now, really Little Ceasar’s (buttery, crunchy deliciousness) but I’m lazy, so I ordered this new pan pizza from Papa John’s.  I ate two slices, at about 40 carbs a slice, and really worked to enjoy my “cheat”; it wasn’t really that good though.  I also ate the order of wings, no breading, which I dipped in some Bleu Cheese Dressing and enjoyed more except the weird fat on the wings.  I figured if I’m going to cave, it’s best to do it early in the month so I can work hard the rest of the month.  Also, it’s good to try an old favorite occasionally so you can remember it’s not that good and you don’t idolize or fantasize it.  Plus, the almost instantaneous gastro reactions to such a huge intake of carbs after so few for so long was another great reminder about why I don’t eat carbs (can you imagine I ate that and more every week).  I don’t subscribe to regular cheat meals or carb cycling, I end up eating enough “cheat” meals accidentally by not reading labels or checking nutrition facts before ordering/stuffing into my face, that I don’t need to plan additional ones.

  

 

Snack Pt. 2

At this point, the damage was done so I also spend the rest of the evening enjoying this Milk Chocolate Lily’s bar, the second half of which I dipped in my peanut butter.  Perfect end to the day and my brother will hate me tomorrow as it all processes through, lol.

Daily Reflection

Yes, well . . . my total carbs came to 154g, with 39 of them (surprisingly) being protein and another 14 sugar alcohols from the Lily’s (the Russel Stover & Yorks scanned with net so my total carbs are actually even higher) leaves me with 101 net carbs for the day.  While double my goal of 50 total carbs and way over my goal of 20g net carbs, I’m surprised it’s not more.  I shudder to think what my carb counts were back before LCHF, even when I was eating “healthy” on a diet of some sort.

The nice thing about having done LCHF for this long is that the cravings don’t control me as much anymore.  I made a conscious decision to have real pizza, and chocolate, but I’m not beating myself up about “falling off” or allowing one break from the plan derail my whole weekend.  I’ll be back on it tomorrow, likely starting with either BPC or some eggs to start getting back into Keto.

My steps weren’t as numerous as I had hoped but I was in a meeting most of the morning, just sitting, and then had a full day’s work to get done in half the time, so I probably did good to get the steps I did.  I have some outings planned for tomorrow so hopefully that’ll help.

Egg Fast Day 3

 

Breakfast

I started the day with a BulletProof Coffee.  I enjoyed the caramel so much I went with that again and, again, yum.  Besides tasting so good, I love that it’s so filling, a great meal replacement.

  

 

 

Lunch

It was after 1 before I cooked and ate my lunch, thanks BPC, and I went with scrambled eggs again.  They’re quick and easy and, with salt added, tasted great.  I also added the American cheese so that helped the flavor a lot too.

 

 

 

Dinner

I’ve been aware of the Egg Fast Egg Drop Soup since my first time doing the Egg Fast but have been hesitant to try as I’m a huge texture eater and just didn’t think it would sit well with me.  Wow, it was delicious.  This is not just eggs in water, the seasonings and oils added really make it taste like actual egg drop soup.  Once I got to the bottom, there were some chunks left I didn’t eat but besides that it was just like the real thing.  I will definitely be making this again, even when not on the Egg Fast.

Daily Reflection

I ended up with five whole carbs today, mostly from the chicken broth and other seasonings in the Egg Drop Soup; it was totally worth it though.  My fat is still a lot higher and protein a bit low, makes sense with the BPC, so I’ll keep working on that.

I didn’t get near as many steps in today.  I did make a quick run to the store for the main purpose of getting in steps (besides buying groceries) so that did help a bit.

I forgot to do measurements and such for the First of a new month so I’ll do that tomorrow, along with my official weigh-in.

Feb. 27, 2017 Food Journal

 

Breakfast

I took the time to make a BulletProof Coffee this morning, adding Torani Caramel this time, and it was delicious.  I didn’t, however, take the time to take a picture so recycling this old one.

  

 

Snack Pt. 1

I went down to the building snack bar with a coworker and decided to try this string cheese mid-morning.  I actually liked it, it had an interesting flavor and more natural texture than the Sargento I usually eat.  Less than 1 carb for the stick.

  

 

Lunch

I brought two cut up eggs, with some mayo and mustard dolloped on top, for lunch.  Nice egg salad.

  

 

The egg salad left a bit of a taste so I did one one serving, two pieces, of this Xyloburst for just under a carb.  About an hour and a half before quitting time, I finally had the two cheeses I had brought with me, nice and soft.

 

Dinner

After being home for a bit, I settled on a serving of cream cheese pancakes to round out my day.  Technically, it put me over on my cheese to egg ratio but I couldn’t bring myself to eat just one or two regular eggs.

Daily Reflection

For those who hadn’t caught on, I started an egg fast today.  I wasn’t sure I’d fully commit but took it one meal at a time and made it through.  My total and net carbs, of course, are super low, at only 6g for the day.  My fat was slightly high and protein low so I’ll work on that tomorrow.

Also, going into work helped my steps, even though I drove and didn’t get my usual walk to and from the train station.  I was also pretty busy and didn’t get much time to just be up and about.

Feb. 25, 2017 Food Journal

 

Breakfast

I’m quite pleased to have discovered the Egg McMuffin, sans muffin, option as it’s made on-the-go breakfasts much easier.  Here, I ordered two and placed them together with the eggs as the buns; it was a but thick but tasty.

  

 

Lunch

I had a late lunch, after having been to the zoo and grocery shopping.  A third of a rotisserie chicken and some cheese sticks were the perfect light meal.

  

 

Dinner

I went to a game night at a burger joint and had a burger salad.  This is a chopped up patty with mushrooms on a bed of lettuce and tomato.  There’s also some shredded cheese and I added some bleu cheese dressing, excellent.

  

 

Snack

Unfortunately, the burger place also had a nice ice cream selection and someone at my table got a sundae and kept trying to pawn it off on the rest of us.  I was able to resist but did have to have some Halo Top when I got home.  The texture was a little off but flavor was great and it was so worth it.

A bit after that I did also have the second half of the Coconut Lily’s bar and some peanut butter.  The coconut bar was a lot firmer this time and didn’t melt in my hands like before so maybe it was just warm the first time.

Daily Reflection

My total carbs were spot on at 50, which is my goal, although slightly high in the percent of caloric intake.  The largest part of that was the chocolate, which is really only 4 net carbs but calculates in as 20 total.  My fiber was 22g, which brings my net carbs down to 28 and the chocolate has 5g of erythritol, bringing it down to 23g, which is quite close to my goal of 20g.

I actually met my 10,000 step goal today, which is awesome.  With my trip to the zoo followed by shopping, I did quite a bit of walking but was impressed it came to that much.  Hopefully I can keep the momentum going this week.

Feb. 24, 2017 Food Journal

 

Breakfast

I started my day with another BulletProof Coffee.  This time, instead of the Torani Vanilla I sweetened it with some Chocolate SweetLeaf drops.  I still didn’t notice much of a chocolate flavor but it still tasted good.  I forgot to take a pic so this one’s from yesterday.

  

 

Lunch

The coffee was fairly filling so I had a late lunch.  I had pulled out this Pesto Chicken Spaghetti Squash bake on Wed. to eat at work and ended up not eating it so I had it today.  It reheats well and has good flavor, quite enjoyable.

  

 

Snack Pt. 1

I’m suffering from shark week, big time, so when the afternoon hit I couldn’t fight the craving anymore.  I ordered this peanut butter online and it arrived last weekend but I’ve been trying to keep the carbs lower and hadn’t tried it.  It was pretty good but had separated a bit and was runny, so I need to mix it back together before trying more.  I wasn’t a fan of the chocolate, I thought coconut would be little flakes but I think it’s made with coconut oil, which makes it melt super fast and gives it a weird texture.

  

 

Dinner

Once I got off work (from home) I went outside and did some yard work.  First raking the back yard to get as many sweet gum balls as possible, then mowing the front yard.  By the time I came back inside, I was pooped and was not making dinner.  I ordered through UberEats from a local restaurant and got Parmesan Crusted Sole with Spinach Orzo.  It was hard to tell if the fish was only crusted in parmesan or if there was breading on there too and I had forgotten orzo is a type of rice so I basically picked out the spinach leaves to eat with the fish.  It had a great flavor but I feel like it was really more carbs than the matches I found on My Fitness Pal came to.

  

 

 

After dinner resulted in more chocolate, of course.  These wafer candies are quite good and I’ll have to keep myself from eating them all.  Even my brother thought they were decent.

I stayed up late completing my very last assignment for my Master’s degree and had the two sticks of string cheese to keep me going.  I originally intended to get something 0 carb, to not add to what I already had, but these were more interactive (what I needed) and worth the 1 carb each.

Daily Reflection

Not my best day but by no means my worst.  Today was actually pretty decent except for the fact I’m trying to be stricter with my end-of-month weigh-in coming up and a goal to hit.  My total carbs in My Fitness Pal came to 61g, a bit over my goal of 50g.  A good chunk of that, 20g, comes from the total carbs of the Lily’s chocolate being calculated, 12g of which are fiber and another 5 erythritol.  The next highest was the fish and I still fear it should be even higher than the 16g of carb option I selected in MFP (one option was over 100g in carbs).  Altogether my fiber intake was 20g, plus the 5g sugar alcohols, brings my net carbs down to around 36g, definitely over my 20g goal.

On the other side, all my outdoor yard work really helped my steps and exercise goals, with over 5,000 steps for the day.  For a work at home day, that’s excellent.  🙂

Feb. 23, 2017 Food Journal

 

 

 

Breakfast

I started my day with a BulletProof Coffee, yum.  I tried adding cacao nibs and didn’t find that it helped any as the blender didn’t really catch and cut them up.  It was still good anyway.

 

Snack

I had a charity event this evening so even though I wasn’t quite hungry, I didn’t know when I’d get a chance to eat so I had a couple of cheese pieces to tide me over.  These are sold at Sam’s and are quite good, a nice change from the standard cheddar and colby jack.

  

 

Lunch

Technically I ate this at definitely dinner time but as I had another meal after, I moved it to lunch.  I thought I was good in not getting buns or even cheese (the bag behind the counter said Velveeta brand shredded cheese).  I don’t know what kind of hot dogs they used but, based on how puffy they were, I’m guessing BallPark, which come out to 5 carbs per dog, *sigh*.  Even worse, I had two of them.

   

 

Dinner

I grabbed this on my way home from the charity event, well after 10pm.  A Whataburger double meat with no bun.  I added the mustard and mayo myself so it didn’t quite have the Whataburger flavor but close enough.  If you don’t live in TX, you’re missing out.  I was surprised at how high the carbs still were, but there were tomatoes and lettuce.

  

 

Snack Pt. 2

I decided to end my night with something sweet.  I was choosing between ChocoRite peanut butter or crispy when I glanced up and saw a large box.  It hit me suddenly that I had ordered these La Nouba desserts and hadn’t even taken the plastic wrap off the box.  They make great low carb marshmallows BTW.  I broke that sucker open and barely took the picture before scarfing it down.  It was actually really sweet and nice and crispy; I’m definitely glad I have a whole box of them.  The only down side is they are maltitol sweetened and foreign, so the label is hard to read.

Daily Reflection

Unfortunately my carbs aren’t as low as yesterday, darn hot dogs, and my total carbs came in at 23; the dessert pushed me over the edge.  My Fitness Pal recorded 0g fiber, although there had to be some in those veggies with the burger, that keeps me at 23 net carbs for the day.  Technically my total carbs were higher as the dessert clocked in as net carbs.

My steps were decent, I worked from home and spent much of the day sitting at my computer.  Even at the event tonight, I was mostly sitting with just a little walking, as evidenced by all the red dots on my activity.  I work from home tomorrow too but do have yard work to do so that should help.
